I made this sweet potato & tuna frizzle for lunch the other day and it was so incredibly tasty and warming. It’s naturally gluten free, dairy free, egg free and soya free!
What you need:
- Cooked sweet potato (1 large one) and / or cooked butternut squash
- Tinned tuna / salmon (1 normal sized tin)
- Finely chopped red onion (half)
- Fresh coriander finely chopped (handful)
What you do:
- Mix it altogether in a bowl
- Try to make fish cakes out of it and discover it doesn’t bind
- Frizzle it anyway until it looks ‘just right’
- Serve it with a lovely salad!
This sweet potato & tuna frizzle also makes a great packed lunch!

Oooh interesting, I’ve never mixed sweet potato and tuna together but I’ve used white potatoes so could see how this could work…. ooh wonder if I can sneak it onto this week’s meal plan?!

I find that I’ve been using sweet potato in a lot of different ways lately…although I’ve never frizzled it 🙂 I imagine it would be great with the tuna. #foodpornthursdays

I think some oils are better to frizzle with than others :). I tend to use rice bran oil as it’s nutritious and has a high smoking point!

That sounds really nice. I eat way too much bread, especially at lunch time, makes me feel sluggish, so this sounds perfect for me. I love sweet potatoes too 🙂

Bread does the same thing to me too! I think I’m not so good on lots of wheat. Sweet potatoes can be too sweet for me, depending on how they’re cooked but this was just so lovely.
